  • 2 cucumbers
  • 2 green bell peppers
  • ½ red onion
  • 4 hard boiled eggs
  • ¾ cup Italian Dressing Roma Classic
  • ½ cup pepperoncini peppers
  • ¼ cup sunflower kernels
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp ground black pepper

We know what you’re thinking — how is this a no-cook recipe if you’re supposed to boil eggs? Hear us out. The eggs don’t need your attention while they’re boiling. So, you’ll be free to step away from the stove while they’re reaching your desired level of doneness. Here are the steps to follow:

  1. Finely chop all the veggies and hard-boiled eggs.
  2. Add the dressing and spices and toss until the salad is evenly combined. Feel free to use a different amount of dressing or different veggies. This recipe doesn’t need to be followed to a T, so if you don’t like hard-boiled eggs, feel free to make them soft.

 

Rotisserie Chicken Salad

Yet another salad? Don’t worry about it because this is the type of salad you can easily put on top of bread. Seriously, you can make it into a chicken sandwich without a hassle. All you’ll need is some rotisserie chicken leftovers. Now, many people wonder how long can leftovers last in the fridge? The answer is 3-5 days, so if your chicken is older than that, it’s best not to use it.

Here’s the ingredient list:

  • 2 cups shredded rotisserie chicken leftovers
  • ¼ cup low-fat mayonnaise
  • ¼ cup plain yogurt
  • 3 ribs celery
  • ¼ cup fresh basil
  • ¾ tsp garlic powder
  • 1 tsp Blue Cheese Honey & Shallots Spread

And the instructions? We feel like you don’t need a step-by-step for this one because it’s that easy. All you need to do is combine all of the ingredients in a mixing bowl and use them as a spread on buns or crisp lettuce leaves. If you’re wondering what to do with pulled pork leftovers? Add them to this recipe by replacing the chicken, and voila!

 

Lime Coconut Smoothie Bowl

Let’s move on to a delicious, summery breakfast that everyone can make. We’re sure you’ve heard of these before because smoothie bowls are very popular all over social media. And now we’ll teach you how to make one yourself. The list of ingredients can be swapped, added, and subtracted however you want. But if it’s your first time making a smoothie bowl, we suggest following this recipe to a T.

You’ll need:

  • 1 medium banana, frozen
  • 1 cup baby spinach
  • ½ cup ice cubes
  • ½ cup fresh pineapple
  • ¼ cup sweetened shredded coconut
  • ½ cup plain greek yogurt
  • ½ cup frozen mango chunks
  • 3 tbsp Cold-pressed honey
  • 2 tsp grated lime zest
  • ½ tsp vanilla extract

Blend until they’re smooth, and your smoothie bowl is good to go. You can top the bowl with extra bananas, coconut flakes, and granola, but this step is optional.

  • 200 gr fresh strawberries
  • 1 cup shredded coconut
  • ¾ cup traditional oats
  • 2 tbsp white chia seeds
  • 2 tbsp coconut oil
  • 2 tsp acai powder
  • 2 ½ tbsp shredded coconut to coat

And how do you make this delicious snack? Process strawberries until smooth, then add the remaining ingredients and process again until combined. Create balls with your mixture and roll them in extra coconut for coating. Thank us later!
